Raspberry & Redcurrant Fool

These deliciously moreish homemade wild Raspberry and Redcurrant fools are super-quick to make, and taste outrageously good. Fruity cream heaven! Works equally well with Wild Strawberry, Blackberry, Bilberry or Cherry!

Quantity: Makes 4 Fools.

  • 225g of wild raspberries
  • 225g of wild redcurrants
  • 3 tbsp of granulated sugar
  • 300ml double cream
  • a few whole raspberries and redcurrants to decorate


  • Wash the wild Raspberries and Redcurrants.
  • Place the fruit in a food processor with the sugar and blitz to a thick sauce.
  • Whip the cream until stiff. Gently fold the raspberry sauce into the cream.
  • Swirl into to individual ramekins or cocktail glasses (if you're feeling posh!) and chill thoroughly. Top with whole raspberries, redcurrants or mint leaves and serve.
